Sometime I really surprise myself! The more I’m forced to alter recipe’s the better I get at it, even though I feel like I’m just guessing. I really wanted some cookies this week so of course I want online to find a recipe that was at least half way there. Here is a link to the original recipe I found. Here is how it ended up:
- 1/2 cp coconut oil
- 1/4 cp peanut butter powder
- 1 egg
- 1 tsp vanilla
- 1/4 cp honey
- 3/4 cp whole wheat pastry flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 1/2 cp rolled oats
- 1/2 cp chopped 100% cocoa chocolate
Pre-heat oven to 350. Cream coconut oil and peanut butter powder. Mix in egg, vanilla, and honey. Mix in flour, baking powder, salt, and oats. Once combined, stir in chocolate. Drop about Tbsp scoops on a greased cookie sheet. Bake for about 15 min until edges start to brown.
You could probably use natural peanut butter instead of the peanut butter powder if you did not want the coconut sugar that the powder has in it.
